Your charming host and executive chef, has worn many hats during his formative years in the hospitality industry. He calls his native Ballyganeen
home these days, but has travelled abroad and honed his culinary skills both
in the US and England. His tenure as pastry chef at Manhattan's
famous Harbour Lights Restaurant and London's Corning & Barrow
Wine Company were only building blocks towards his ultimate dream,
Coill an Róis Guest House.

We travelled 11 days in Western and Southern Ireland

was THE best! Jimmy is a superb host, wonderful cook, and
makes everyone feel at home immediately.

Every morning for breakfast he baked fantastic muffins
and scones, and we could choose between Irish
breakfast, fruits etc. His hospitality and friendlyness
is really outstanding, and we can highly recommend
his B+B to everyone visiting Dingle. And of
course are all rooms very nice and clean.
A hot spot on this Peninsula!!

Greeted with a pot of coffee and some amazing homemade
cookies it soon came to light that our host is
a former pastry chef. Jimmy made us dinner reservations
for a wonderful nearby restaurant that would rival
any four star dining in a large city.
